Cooking cilantro lime rice in a rice cooker is actually really easy. This delicious dish can be cooked on the stove, but it’s best to use a rice cooker for consistent results. With your rice cooker, you will be able to cook perfect cilantro lime rice every time.

Heres the basic method:

1. Add rice and water to your cooker

2. Add salt, pepper, and cilantro to the cooker

3. Cook on high for 20 minutes or until all of the water has been absorbed

4. Stir in lime juice before serving

5. Enjoy!

6. Recipe makes 2 servings at 3 cups each per person

Stovetop method – with a slight variation in taste

The first thing you need to do is wash the cilantro and peel the garlic cloves before chopping them finely (about 1 tablespoon of each). Then add cumin seeds, salt, black pepper and brown sugar (optional) into the pot with 2 cups of water or broth. Bring this saucepan mixture up to a boil then reduce heat and simmer for about 10 minutes until all liquid has been absorbed by your uncooked white long grain basmati rice.

Here are some simple variations on this great dish:

First Variation: Chipotle Cilantro Lime Brown Rice

You can cook Cilantro Lime Brown Rice in a rice cooker (easy, because most rice cookers have a ‘brown rice’ button) or on the stovetop. I prefer to use brown Basmati rice, but any long-grain brown rice will do.

Tip: Because brown rice takes a little longer, just follow the revised cooking times as outlined in this post.

Serve hot or at room temperature.

2 cups brown rice makes 16 servings, ½ cup each (higher yield than white rice).

If using different long-grain rice, I recommend rinsing it before cooking it to remove excess starch.

Bonus Dish:Cilantro Rice Casserole

It’s not really a rice dish but I love this recipe so much I just had to include it. I hope you enjoy it.

The cilantro lime casserole is a family favorite dish that’s perfect for any occasion and it makes a great companion to your cilantro lime rice. The best part about this recipe is how you can make it in advance and let the flavors mingle together to create an excellent roasted chicken cilantro sauce, which will be ready when your guests are getting hungry! To start off, preheat your oven to 375 degrees Fahrenheit and make cilantro lime rice on the stovetop.

Some Cilantro Lime Rice FAQs

What does short-grain, medium-grain, and long-grain rice really mean?

Short-grain rice is the stickiest, and it’s best for things like sushi. Medium-grain rice has a little more texture than short-grain but not as much texture as long grain. Long-grain rice is less sticky or clumpy then the other types of rice and you can even cook it with cilantro lime seasoning without using a rice cooker.

How many cups of rice will 1 cup uncooked rice make?

One cup of uncooked rice will make six cups of cooked rice! But that’s not all. If you only use half a cup, then it is equivalent to three cups once fully cooked. That means one day with just two hours’ worth of time and patience could yield 18 servings without any extra effort or even having to go out grocery shopping!

One serving size for typical white long-grain (basmati) varieties is around 170g which yields up about 6 – 7 ounces when dry weight measurements are taken into account. A single person would typically need 2-3 portions per meal depending on their appetite while the average family unit consisting of four people may require 4 servings throughout the course of an evening dinner session.

How many cilantro leaves can you use for a pound of uncooked rice?

You should be able to substitute about two tablespoons per one pound, but it’s best if the cilantro is finely chopped instead.
