Mushroom Risotto in Your Rice Cooker

  1. Turn on the Instant Pot and select the Sauté function. Add the olive oil and butter to the pot and let it melt.
  2. Add the onions and garlic to the pot and sauté for 2-3 minutes until the onions are translucent.
  3. Add the sliced mushrooms to the pot and sauté for another 2-3 minutes until they have released their moisture and are slightly browned.
  4. Add the Arborio rice to the pot and stir to coat it with the mushroom mixture. Let it cook for 1-2 minutes until the rice is slightly toasted.
  5. Pour in the white wine and let it cook for another minute until it has been absorbed by the rice.
  6. Add the chicken or vegetable broth to the pot and stir well. Secure the Instant Pot lid and make sure the venting knob is in the sealing position.
  7. Select the Manual or Pressure Cook function and set the cooking time for 5 minutes. Once the cooking time is up, let the pressure release naturally for 10 minutes before quick-releasing any remaining pressure.
  8. Open the Instant Pot lid and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
  9. Let the risotto rest for a few minutes to thicken. Serve hot, garnished with chopped parsley.
