Ingredients:

1Red bell pepper
1Green bell pepper
1Onion
2 clovesGarlic
1 tspCumin powder
1 tspChili powder

1/4 tspCayenne pepper
2 cupsVegetable broth
To tasteSalt
To tasteBlack pepper

Instructions:

  1. Rinse the quinoa in a fine-mesh strainer and drain well.
  2. Preheat the rice cooker and lightly coat with cooking spray.
  3. Add the quinoa, black beans, corn, chopped red and green bell peppers, chopped onion, and minced garlic to the rice cooker.
  4. In a small bowl, mix the cumin powder, chili powder, paprika, and cayenne pepper together.
  5. Add the spice mixture to the rice cooker and mix well.
  6. Pour the vegetable broth into the rice cooker and mix again.
  7. Add salt and black pepper to taste.
  8. Cover the rice cooker and turn it on.
  9. Cook for 20-25 minutes or until the quinoa is tender and has absorbed all the liquid.
  10. Fluff the quinoa with a fork and serve hot.
